Bacon Wrapped Swordfish

8 oz. Swordfish steak
Mirin (Japanese Wine)
Olive Oil
2 strips of Bacon
Sweet Soy Sauce

Crisscross 2 strips of bacon over the Swordfish steaks. Brush with Mirin and Sweet Soy Sauce. Sear each side in oil over medium heat until browned. Check for doneness (white/moist). Finish in oven if necessary. Garnish with sliced scallions. Swordfish can be grilled, then panned on covered grill until cooked.
